Research of the department focusses on ensuring the nutritional value of foods, comprising aspects of microbiological and chemical safety, product identity and quality as well as technology. Projects on food metabolomics include detecting the effects of feeding or processing on dairy and fishery products by investigating the metabolome of these foods. Furthermore, new analytical approaches like proteomic techniques are used to characterize chemical changes of milk or fish peptides and proteins and to identify quality or processing markers in foods.
